Harry and David call this sweet and crunchy treat “Moose Munch.” If I could get them to share their name that would be awesome… it’s so cute. I love it… almost as much as I love this recipe.
The aroma of sweetly caramelized pecans with honey and vanilla make this treat addictively delicious and will warm your soul. Once you indulge in this gourmet caramel popcorn you’ll be hooked and reaching for more.
I like to call this little treat my “sweet addiction.”
Gourmet Pecan Caramel Popcorn
- 2 quarts of popped popcorn
- 1/2 cup sucanat or turbinado sugar
- 1/4 cup buttery spread
- 2 tablespoon honey (I like to use ambrosia honey)
- 1 teaspoon vanilla
- 1/2 to 1 cup lightly chopped pecans (If you like pecans, yum, use 1 cup)
- 1/2 bar of favorite dark chocolate (I use Chocolove 70% dark chocolate bar)
Preheat oven to 250° degrees. Line baking sheet with unbleached parchment paper.
Put popped popcorn and pecans into large mixing bowl.
Put sugar, buttery spread, honey and vanilla in medium pot on stove and bring to a boil and boil for 1 minute, stirring constantly. Drizzle over popcorn and nuts and mix well.
Spread onto large, parchment lined, cookie sheet and bake 30 minutes. Lightly stir every 10 minutes. Remove from oven and let cool.
Melt chocolate in small dish in microwave. Drizzle over popcorn nut mixture. Totally optional but so decadent.
